i always find a remap is better , but in the long run gives less flexibility if you like to tweak setups

Just done a tank swap on the Harley , what's the best way to store the old tank , drained fuel and got it open in the garage at the moment , hoping the residue will evaporate , is this the correct thing to do?

Mine was an HM racing one but connected to the pc3 making it universal

I very much doubt that, while your cheap helmet may be of reasonable quality it's not going to stack up to a proper one.
I have high end helmets and have always had high end helmets , mainly because I'm a tart and like a bit of carbon , I've tried numours ones over the years and I'm telling you these helmets are higher rated for safety than most entry level helmets from the major brands , higher than some of the mid level ones also , and the quality is on par with the low to mid
